Bringing Breakfast Back!








Buttermilk Pancakes


  • 2 cups buttermilk
  • 2 eggs
  • ¼ cup vegetable oil
  • 1-tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1-cup all-purpose flour
  • ¾ cup self-rising cornmeal


In a large bowl, beat the eggs; beat in remaining ingredients, mixing until smooth.  For each pancake, pour about ¼ cup batter onto a hot, lightly greased fry pan or griddle.  Turn pancakes when tops are covered with bubbles and cook the other side.  Serve hot with syrup or topping of your choice.

  7. I love this post. My favorite memories of growing up are always around the kitchen table. Breakfast with your family is great! Thank you for reminding me. Jack is not going to eat cereal alone tomorrow while I run around getting his stuff ready. He won't remember that, but he will remember me sitting down and having breakfast with him!
